For many years now wine and cheese pairing have been a tradition. Some say the tradition is almost as old as wine itself. No matter when the tradition started, there is no denying that wine and cheese just seem to go well together.

Having said this, matching the right type of cheese to go with your wine can really make a big difference. Selecting the right cheese to have with your wine is largely a matter of personal preference, nevertheless helpful and professional advice is always welcomed.

Eli Basher, a pioneer in the Israeli fromage scene recently partnered with the renowned Hinawee family and opened the biggest store in Israel dedicated to wine, cheese and fine dining. The store offers a wide selection of quality wines, premium beers, chocolates, olive oil and an impressive assortment of over 700 types of cheese from around the world.

As a person who grew up in Jerusalem and consider myself a regular at the “Mahane Yehuda” shuk (Hebrew for market), I try and visit Basher’s store in the enclosed part of the shuk as frequent as possible. Eli has a true passion for cheese which started about 10 years ago while on a trip to Europe, there he first encountered the rich and pungent world of cheese.

Upon his return Eli decided to transform the family owned restaurant in the shuk to one of the top fromagerie’s in the region. Being served by Eli, his brother Dudi, or any other member the Basher staff is a real treat. If you are celebrating with a fine bottle of wine or just feel like pampering yourself with a hot cheese fondue just tell the Basher staff and they will assist you in finding the perfect cheese for the occasion.

On my most recent visit to the store I asked Eli for a couple of wine and cheese pairing suggestions. We decided to match cheeses from around the world with Israeli wines. One of my favorite hard cheeses in the store is the Reipannierr V.S.O.P. Aged for 12 years, this cheese offers sharp deep flavors and is of great texture. Eli suggests pairing this cheese with a full bodied Cabernet for example the Clos-de Gat Cab or the Yarden 2003. One of the all time classics is serving potent blue cheese with sweet fortified Port style wine, the sweetness of the port cuts through the spiciness of the cheese and provides excellent contrast. Try serving Basher’s Stilton or Blue de Basc cheeses with Israeli port style wines by Vila Villhelma or the one produced by the Ruth winery. Amir, one of the veterans in the store says that his favorite is the Italian Taleggio cheese with olives, a fresh baguette and a glass of Merlot. With this kind of advice you just can’t go wrong.
