Dalton Syrah
Dalton Syrah Yonatan Sternberg

The Dalton winery which was founded in 1995 was one of the first to recognize the Upper Galilee's tremendous potential as a prime winemaking region. In addition to this, Dalton is also the only (large) commercial winery that has a female lead-winemaker. After training in Australia and California, the young and talented Na’ama Mualem returned to Israel and began producing quality wines under the Dalton label. Dalton Winery and its vineyards are located in an exclusive area of the Upper Galilee (Merom Hagalil). The winery currently has vineyards in the renowned Kerem Ben Zimra and several other high altitude vineyards ranging between 800 - 900 meters above sea level. The winery produces both varietal as well as blended wines in several series. My favorite is definitely the winery’s single vineyard label which although a bit pricey is usually worth the money. Dalton also releases both red as well as white wines relying on: Merlot, Cabernet Sauvignon, Shiraz, Zinfandel, Chardonnay, Viognier and others.

This week I decided to write about another one of my favorites by Dalton, the Syrah Reserve.

Tasting notes:
With a dark garnet towards black color and a full body, this Syrah gives off generous aromas of black fruits particularly plums and dark berry fruit followed by a touch of thyme and a peppery scent. Similar to the nose the wine is rich and concentrated and offers a long and elegant finish.

Food Pairing:
Syrah wines can be paired with a variety of dishes; personally I enjoy serving (and drinking of course) this Syrah alongside quality grilled fresh meats. Another great option would be to serve this red with a roasted piece of sirloin with a Dijon, thyme and black pepper crust.

Tip of the Week: “Shavuot wine tasting”
In the days before the Shavuot holiday, the Dalton winery invites wine lovers to participate in a Galilee wine and cheese experience. The program will begin with a tour of the winery’s vineyards which will be guided by Na’ama Mualem. Following the tour the guests will return to Dalton’s visiting center and tasting room where they will attend a tasting session of the winery’s white wines accompanied by an assortment of quality local cheeses.
